Controlling and selecting carrot powder raw materials is crucial for ensuring product quality, nutritional value, and safety. This requires careful control of carrot varieties, planting, harvesting, and pre-processing from the very beginning. These varieties are firm, resist browning after drying, and have a rich flavor, making them more suitable for powder production. If specific nutritional enhancements are required (such as high carotene or dietary fiber), we can select the corresponding varieties. PulpJuica®Carrot powder is a natural raw material that is rich in nutrition, easy to store and convenient to use. It is widely used in food, health products, feed and other fields due to its unique color (orange-yellow), flavor (light carrot aroma) and nutritional properties (high in carotene and dietary fiber).
The food industry is the primary application for carrot powder, where it can enhance the nutritional value, improve color and taste, and simplify production processes. Adding 5%-15% carrot powder to baked goods can partially replace flour, increasing dietary fiber and carotenoid content while imparting a natural orange-yellow hue and enhancing visual appeal. As a core ingredient in meal replacement powders and nutritional powders, carrot powder can be combined with oatmeal flour, soy flour, and other ingredients to create instant meal replacement products that provide balanced nutrition. A small amount of carrot powder (2%-5%) can be added to instant soups and seasoning packets to enhance the flavor and nutritional value of the soup while also improving its color. Adding carrot powder to snack foods enhances the authenticity of "vegetable flavor" and reduces the use of artificial colors, aligning with healthy consumption trends. The active ingredients in PulpJuica®Carrot powder refer to natural substances with physiological activities (such as antioxidant, metabolic regulation, and immune enhancement). Beta-carotene is the most abundant, a precursor to vitamin A (converted to vitamin A in the body). It possesses strong antioxidant properties, scavenging free radicals and protecting cells from oxidative damage. It also helps maintain vision, skin health, and immune system function. Alpha-carotene, which can also be converted to vitamin A, has a strong antioxidant capacity. Studies have shown that it may play a role in preventing cardiovascular disease and inhibiting tumor cell proliferation. Other carotenoids, such as lutein and zeaxanthin, although present in lower concentrations, can protect the retina, reduce oxidative damage to the eye, and prevent eye diseases such as macular degeneration.
Vitamins include vitamin C, vitamin E, and B vitamins. Minerals include potassium, calcium, magnesium, and iron. Carrots contain small amounts of polyphenols (such as chlorogenic acid), which have antioxidant and anti-inflammatory properties. Natural pigments (such as carotenoids) are also active ingredients in their own right, providing antioxidant benefits while also enhancing the color and nutritional value of foods.
■ Production technology characteristics
The production process for PulpJuica®Carrot powder focuses on preserving nutrients and ensuring product quality (color, flavor, and fineness). It primarily includes raw material pretreatment, drying, crushing, and post-processing. A combined process removes sediment, impurities, and pesticide residue from the carrot surface (using a standard fruit and vegetable cleaning agent, if necessary, to reduce the risk of pesticide residue). After cleaning, carrots are graded by size (e.g., diameters of 2-5 cm are acceptable) to facilitate synchronization with subsequent processing. Peeling is typically done mechanically (e.g., roller friction peeling) or steam peeling (high-temperature steam quickly softens the skin before peeling), avoiding the use of chemical peeling agents to prevent residue. After peeling, the flesh is inspected for quality, and any areas with black cores, hollows, or browning are removed. The carrots are cut into uniform small pieces or thin slices to increase surface area, accelerate drying efficiency, and ensure uniform drying.
Drying is crucial to carrot powder quality. Water must be removed (final moisture content must be ≤8%) while preserving nutrients (especially carotenoids) and color as much as possible. Hot air drying involves placing the raw materials in a hot air circulating oven at 60-70°C, where the hot air removes moisture. The drying time is approximately 6-12 hours (adjusted depending on the size of the material). This method is low-cost and easy to use, but high temperatures may cause some carotenoid loss and a slightly darker color. Vacuum freeze drying involves freezing the raw materials to below -30°C, then sublimating the moisture in a vacuum environment. The drying temperature is controlled at 30-50°C, and the drying time is approximately 12-24 hours. Low-temperature drying maximizes the preservation of nutrients and natural color, resulting in a loose, easily crushed product, but at a higher cost.
Place the dried carrot chunks (moisture content ≤8%) in a high-speed grinder (such as a hammer mill or ultrafine grinder) and grind them to a desired fineness (generally 80-120 mesh, with ultrafine powders reaching 200 mesh or higher). Sieve the powder through a vibrating screen to remove coarse particles and ensure uniform particle size. Coarse particles can be returned to the grinder for a second grinding step.
